Instant Oatmeal PacketsBlend 1/2 oats until powdery fine. Into each of 10 Zip lock bags combine:
To use: Empty packet into bowl and add 1/2 cup boiling water. Stir until thick.
- 1/4 cup regular oats
- 2 tablespoons powdered oats
- 1/4 teaspoon salt
Oatmeal Pie (You can use this when you run short of pecans)
Combine ingredients and pour into unbaked pie shell. Bake 30 minutes at 375 degrees
- 2/3 cup coconut
- 2 tablespoons butter
- 1/2 cup nuts
- 1 teaspoon vanilla
- 3 well beaten eggs
- 2/3 cup sugar
- 1 cup brown sugar
- 2/3 cup quick oats
Oatmeal Muffins
Soak oats in buttermilk. Add eggs and brown sugar and mix liightly. Blend in shortening . Stir dry ingredients together and add to oats mixture. Blend only enough to moisten dry ingredients., Fill oiled muffin pans 2/3 full. Bake 15-20 minutes at 400 degrees. Makes 5 dozen.
- 4 cups quick oats
- 5 eggs
- 2 1/2 cups shortening , melted and cooled
- 6 cups flour
- 2 1/2 teaspoons salt
- 1 1/2 quart buttermilk
- 3 cups brown sugar
- 5 teaspoons baking powder
- 2 1/2 teaspoons soda
