When you substitute honey for granulated sugar in recipes...

- Because of its high fructose content, honey is judged to be twice (2 X) as sweet as sugar. Therefore, to get the same sweetness as sugar, you use one half (1/2) as much as you would of sugar. Sweetness is a very individual taste. You should experiment with the amount of honey substituing between 1/2 and 1 times the amount of honey as sugar.

- Reduce the amount of liquid in the recipe by 1/4 cup for each cup of honey used in baked goods.

- Reduce oven temperature by 25 degrees F to prevent over-browning of baked goods.

For best results, use recipes developed for using honey. Honey adds a sweet, smooth and distinctive taste to food. Honey also absorbs and retains moisture. These qualities help keep baked goods moist and fresh longer.

A 12-ounce jar of honey equals a standard measuring cup.

NOTE: Honey should not be fed to infants under 1 year of age. Honey is a safe and wholesome food for older children and adults.


Honey Mustard Marinade

Instructions: Blend all of the above and use as a marinade or brush on while cooking. Perfect for pork, beef or chicken.

Honey Short Bread

Ingredients:

Instructions: Beat the butter, honey & vanilla together until light and fluffy. Slowly add flour and mix in the Almonds. Place in a 9" cast iron skillet (make sure it's even thoughout). Bake at 300F for 40 minutes. Cool slightly before unmolding - it is wonderful warm (makes about 24 slices).

Combine first 4 ingredients. Dip bread slices in mixture and fry in butter until golden brown. Serve with Billy Bee Honey, sprinkled with cinnamon.

Whole-wheat Muffins

Combine flour, baking powder and salt. In separate bowl mix milk, honey, oil and egg. Stir liquid ingredients into dry ingredients just until flour is moistened. Spoon batter into greased muffin tins. Bake in preheated 200 C (400 F) oven for 20- 25 minutes. Makes 12 muffins.

Billy Bee Honey Almond Biscotti - "an Italian Delicacy"
(biscotti Means Twice Baked Cookies)

Grind half the amount of almonds (either in food processor or nutgrinder) to a fine powder. Combine the ground nuts, flour, sugar, baking powder, baking soda and cinnamon. Add Billy Bee Honey and water, mix well until mixture forms dough. Divide the dough in half, shape each into cylinder about 15 inches long. Place them well apart on a cookie sheet that has been lined with buttered parchment or wax paper. Bake in preheated 350oF oven for 30 minutes or until risen, firm and dark gold. Cool slightly. Remove dough to cutting board. Slice into 1/2" pieces. Place cookies, cut side down, on cookie sheet again; bake for 15 minutes or until lightly coloured and dry. Makes about 48 cookies. (These Italian traditional cookies are very hard on their own.

Makes 4 servings

These are easier than apple pie! You can make fun decorations with the extra scraps of dough.

Prepared pie dough for two single-crust 9-inch pies (purchased or homemade).

In a small bowl, combine currants, walnuts and 1/2 tsp. cinnamon. Stir in 3 Tbsp. honey. Peel apples and cut each in half lengthwise. Trim away stem and blossom ends. Scoop out core from each half with a melon baller, making a wide hole for filling. Divide honey mixture evenly between apple centers. Divide pie dough into 4 balls. Roll each ball into a 6-inch circle about 1/4-inch thick. Lay 1 piece of dough over each apple half with filling-side up. Tuck and wrap dough around each apple half. Trim dough to fit. Pinch the edges of dough underneath apples to seal entirely. Combine 1 Tbsp. honey with 1 tsp. steaming hot water. Stir until honey dissolves. Brush mixture over tops of turnovers; dust with additional cinnamon. Transfer turnovers to an ungreased baking sheet. Bake at 375°F for about 35 minutes, until turnovers are golden. Remove from oven and drizzle with remaining 2 Tbsp. honey. Serve warm or at room temperature.

Honey Crispies
Makes about 30 cookies.

This is a great sleep-over snack.

Place a sheet of waxed paper on a cookie sheet so cookies won't stick. Combine powdered sugar, honey and peanut butter in a medium bowl. Stir until mixed well. Stir in cereal and raisins. Using hands, shape mixture into 1-inch balls. Roll balls in sprinkles and place on a cookie sheet. Refrigerate for 1 hour. Cookies should feel firm when touched. Serve right away or place in tightly covered container and store in refrigerator.
