Cream of Split Pea Soup

Makes 8 servings
- 2 cups split peas
- 4 1/2 cups boiling water
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1 onion, chopped
- 2 tsp salt
- 2 1/2 cups milk (2/3 cup powdered milk and 2 1/2 cups water)
- season to taste (may add chunks of ham, bacon Etc. May substitute TVP®)
Wash split peas and sort. In a large saucepan combine water, split peas, vegetables, and salt. Simmer until peas are soft, about 45 minutes, stirring occasionally. Put through a sieve or a blender. Add powered milk and seasonings, chunks of meat, then reheat and serve.
