Instant Oatmeal Packets,
Oatmeal Pie
and Oatmeal Muffins
Spaghetti

Instant Oatmeal Packets

Blend 1/2 oats until powdery fine. Into each of 10 Zip lock bags combine:
bullet1/4 cup regular oats
bullet2 tablespoons powdered oats
bullet1/4 teaspoon salt
bullet 
To use: Empty packet into bowl and add 1/2 cup boiling water. Stir until thick.

Oatmeal Pie (You can use this when you run short of pecans)
bullet2/3 cup coconut
bullet2 tablespoons butter
bullet1/2 cup nuts
bullet1 teaspoon vanilla
bullet3 well beaten eggs
bullet2/3 cup sugar
bullet1 cup brown sugar
bullet2/3 cup quick oats
Combine ingredients and pour into unbaked pie shell. Bake 30 minutes at 375 degrees

Oatmeal Muffins
bullet4 cups quick oats
bullet5 eggs
bullet2 1/2 cups shortening , melted and cooled
bullet6 cups flour
bullet 2 1/2 teaspoons salt
bullet1 1/2 quart buttermilk
bullet3 cups brown sugar
bullet5 teaspoons baking powder
bullet2 1/2 teaspoons soda
Soak oats in buttermilk. Add eggs and brown sugar and mix liightly. Blend in shortening . Stir dry ingredients together and add to oats mixture. Blend only enough to moisten dry ingredients., Fill oiled muffin pans 2/3 full. Bake 15-20 minutes at 400 degrees. Makes 5 dozen.
