Soy Meat Loaf, Soybean Soup and Lemon Cookies
Spaghetti

Soy Meat Loaf
bullet2 cups ground lean beef
bullet1 1/3 cups cooked soybeans
bullet2 eggs
bullet1cup milk
bullet2 teaspoons salt
bullet1 1/3 tablespoons onion
Use cooked soybeans and put through a food chopper or blender. Combine ground meat and cooked soybeans throughly. Add eggs, milk, salt, onion, and mix. Place in greased muffin tins and bake at 350 degrees for 40 minutes.

Soybean soup

 
bullet4 cups tomato juice
bullet3 tablespoons onion, finely chopped
bullet1 cup raw carrot
bullet1 teaspoon salt
bullet1 cup grated cheese
Simmer all ingredients together for 10 minutes. Sprinkle cheese over soup after it is in serving bow and ready to eat.

Lemon Cookies
bullet1 cup sugar
bullet2 tablespoons cooking fat
bullet1 egg
bullet1/2 cup water plus 1/3 cup dry milk solids
bullet1 1/2 tablespoons lemon juice
bullet1 teaspoon lemon rind
bullet1/4 teapsoon salt
bullet1 cup wheat flour
bullet1/3 cup soy flour
bullet2 teaspoons baking powder
bullet 1/2 cup soy mash
Mix sugar and fat. Add remaining ingredients and mix well. Place by teaspoonsfulls onto greased cookie sheet. Press cookies down with a fork. Bake in a 350 degree oven for 10 minutes or until lightly browned. Makes 24 cookies.
