Blender Whole Wheat Pancakes

Recipe by David Edlefsen

 
bullet1 1/2 cups sour milk (can be reconstituted from powdered milk - add 1 T vinegar if milk is fresh)
bullet1 cup wheat berries
bullet1 egg (or equivelant powdered eggs plus water)
bullet1/4 cup oil
bullet1 T sugar
bullet1 t salt
bullet1t baking soda
Combine 1 cup milk with the wheat berries and blend at high speed for 5 minutes. Add the remaining milk and blend another 3 minutes. Add oil, egg, and other ingredients one at a time into the swirl at the top of the blender. Mixture will thcken and rise then the blender will begin to spin freely. Stop blender. Pour the mixture out of the blender into the frying pan.
