Hominy and Cheese Timbales

bullet2 cups drained, canned hominy
bullet2/3 cup grated cheese
bullet2 beaten eggs
bullet3/4 teaspoon salt
bulletDash pepper
bullet2 teaspoons chopped green pepper
bullet2 teaspoons chopped pimiento
bullet3 tablespoons minced parsley
bullet1 cup scalded milk
Combine all ingredients well. Turn into individual baking dishes.

Place in pan of hot water and bake in moderate oven (350 F). 1/2 hour

Unmold and serve with cheese,tomato, or spanish sauce. Serves 6.
