Subject: Creamed Shortening
On one of the forums (probably the General one, since that's where everything is these days) someone mentioned that a strictly vegetarian diet would not work over the long term. Apparently there are certain nutrients that can only be supplied by animal fat. On a recent trip to ALDI's I discovered a product called creamed shortening which contained both animal fat and vegetable oil. It was packaged just like crisco in the sealed containers. If this stuff stores for 10 years like Crisco, wouldn't it be an ideal source of animal fat to supplement the diet????

Let me throw in my two bits here, and this is just my 1/2 educated opinion on the necessity of eating animal fat. In short - wrong! Although I'm not a veggie myself, you could find thousands of them that would agree with me. It is true that you need fat. What follows are the Daily Reference Values (DRV) from the USDA:

Nutritionists generally believe that an adult needs about 100 grams of fat a day. Note from the above that only 20% of those grams need to come from saturated fat. Mostly, they are talking about stearic acid here. So the big question is, can you get non-animal sources of Stearic Acid? Yes!
The following foods contain the following amounts of stearic acid by weight:
Coconut meat: 30%
Peanut oil: 24%
Cheddar Cheese: 21%
Soybean oil: 17%
Olive oil: 16%
Sunflower oil: 12%
Peanuts: 6%
Soybeans: 3%
Let's talk vitamins for a second. Actually, you have more problems here on a no meat diet than the fats. Almost all vitamin A comes from animal sources only. If you aren't going to have a bunch of powdered milk in your food storage along with powdered cheeses and powdered eggs, you will need to take a good multivitamin to get these nutrients. Or you can raise rabbits on the side or some other meat producing animal. (Mice maybe??? :-) )
