I've always thought of gardens in terms of where I have lived before, Oklahoma, Texas, Connecticut or California. I think of gardens first in terms of months of tomatoes, then squash, corn, green beans, etc. So, now I am reminded that gardens don't have to look a certain way. It is lovely and fine to grow broccoli, spinach, lettuce, radishes, raspberries, strawberries, potatoes, and other cool weather vegetables and fruits.

Did you know that many, many people in Russia have gardens? I've read that they have gardens simply to survive since many of them don't get paid for months. Our family can confirm this fact by personal observation. Marion G. Romney once "We will see the day when we will live on what we produce." That is obviously true for the Russians now. Knowing how to garden would also be prudent for us.

Beth’s Favorite Homemade Salsa

When I think of summer, I think of eating homemade salsa and lots of it!

Onion
• 2-3 lbs. tomatoes
• 1 green bell pepper
• 1 red onion
• 1 bunch fresh cilantro
• 1-6 Jalapenos to taste
• 1/4 - 1/2 C. Real lemon Juice to taste
• Salt and pepper to taste
• A little garlic

A food processor is really handy. Use it to chop the tomatoes into fairly small pieces. Do the same with the onion and bell pepper. Use the food processor to pulverize the cilantro and the jalapeno peppers. Mix everything and chill. Serve with tortilla chips. Melt cheese on the chips if desired. You can also use cream cheese on the chips and it tastes great with this sauce. I like it uncooked but you can cook it and can it if desired.

Container Gardening

If you live in an apartment complex or have no space to plant a garden, a relatively large amount of food can be grown in pots. Vegetables can be grown in a sunny room of the house and can be set out onto the patio or deck in warm weather.

Pot sizes or depths:

• Beets - 10-12 inches
• Bush Beans - 8-10 inches
• Carrots - 10-12 inches
• Cucumbers - 1 gallon
• Eggplant - 3 gallons
• Green Pepper - 1 gallon
• Lettuce - 1 gallon
• Green Onions - 8-10 inches
• Radishes - 6 inches
• Spinach - 8-10 inches
• Squash - 5 gallons for 3-4 plant hill
• Tomatoes:
      Dwarf - 1 gallon
      Standard - 2-3 gallons
      Mini - 8-10 inches
